Flavor Trippin’ Redux (Rooftop Style)

On Tuesday, we co-hosted another flavor tripping party with Eventurously on the scenic Hudson Terrace. The roof provided the perfect setting for a sunset soiree, leaving way for an amazing (and trippy!) evening event.

With the sun shining its last rays of day into the room, partygoers were mingling, drinking, and, of course, tripping with fantastic beats and shining lights all around.

“Flavor Tripping”

For those who are unfamiliar, the idea of a flavor trip is to experience familiar foods in unfamiliar (but legal and safe) ways using an extract of the “miracle fruit”. For example, the taste of a lemon suddenly transforms into a sweet lemonade and vinegar might taste like wine!

This incredible temporary change in taste is induced by a glycoprotein named miraculin that temporarily binds to taste buds on the tongue and alters their behavior when they come into contact with acids, such as the citric acid in lemons. Miraculin is found in what are known as “miracle berries,” produced by the plant Synsepalum dulcificum, grown in Africa.

Commercially, miraculin is used as a sugar substitute while some use it to diet or help treat diabetes.

 

The Event

Once settled, trippers received a packet of two mberry tablets, which contain the extract of the “miracle berry”. The idea is to dissolve one on the tongue, making sure it covers the whole tongue and all the tastebuds, so those new tastes really pop! Once primed for a taste revolution, the partygoers were let loose on the tables of food.

 

For most, it was the first time for them to experience this phenomenon, so they were a bit conservative, trying only the lemon or the lime.

 

 

Others of the more adventurous sort desperately wanted to taste the onion, vinegar, or beer. There were pieces of paper at each food so that people could indicate which foods tasted fantastic and which tasted the same regardless of the trip. We had plenty of apples, lemons, limes, shots of vinegar, and even the occasional onion. While the vinegar shots went quickly, the onion remained mostly on the table.

 

 

There were plenty of surprised faces and lots of fun to go around, but the best part was that you could do it all again! The second tablet provided another chance to experience all the miracle fruit has to offer, so the tripping could continue.
