Roasted Butternut Squash and Bell Pepper Soup with Toasted Pecans
It’s a mouthful, but we guarantee this dish will rock your world! Roast your butternut squash and puree for a delicious, toasty soup. You’ve got bell peppers for a nice contrast, caramelized garlic for that punch of flavor as well as toasted pecans and chives to top. Perhaps even some toasted croutons for texture? Vegetarian Miso Ramen with Rice Noodles, Roasted Sweet Potatoes + Sesame Broccolini
There is nothing like ramen or pho on a cruel winter’s day to cure the blues! We’re excited just thinking about fixing this up after work.
