2015 Food Trend: All Hail, The Cauliflower!


Move over, kale. 2015 has found a great replacement in cauliflower, as it is known for its versatility. Unlike the bitter green, the cauliflower is a blank canvas that can take on any flavor!

The cauliflower is available all year round, and has many varieties too. We’re talking purple, yellow, green and even the gorgeous romanesco! It’s time the cauliflower move to the center of the plate, and we’ve got a few exciting ways to get on this healthy food train!

Roasted Cauliflower Steaks with Meyer Lemon Relish 

This is a great Meatless Monday option from Brooklyn Supper, and is a great replacement too! A big chunk of roasted cauliflower will be perfect when tossed with the bright Meyer lemon relish. It’s a great side, or light lunch to enjoy! Full recipe here. 

Purple Cauliflower and Green Bean Sauté

We love the good ‘ol white kind of cauliflower, but purple cauliflower looks awesome. We’re still not over the purple cauliflower and green bean sauté from our friend at Sinful Indulgence!  Cauliflower Gratin with Mornay Sauce 

This recipe off Food52 is said to be painfully simple to make! This cauliflower gratin is smothered in dazzling Mornay sauce, which is a quick adaptation of the classic French béchamel sauce. Turn it into Mornay sauce with a touch of cream, egg yolk, mozzarella and Parmesan cheese. Eating your vegetables, and getting some cheese too? This dish is perfect, guys!
